My friend Lois turned me on to this deliciously easy casserole.

There are few ingredients needed:
Tortillas
Green Chile Sauce
Olives (optional)
Re-fried Beans
Chicken
Cheese
Seasoning of choice (I use salt & pepper)
9"x13" pan

This dish is great for the whole family, after a long night out, or even the day after!
Let's get started..
First, gather all of your ingredients. Lay the chicken out on a plate, and season. Lather, flip, season again. Then, chop the chicken into squares and add to a greased pan. Throw a little green sauce into the pan too. Cook on medium heat until the chicken has reached temp.
Next, add the beans to a pot. Add some sour cream and cheese to the beans. (Milk would work just fine too if you do not have sour cream). Keep stirring until it is smooth. Return to the chicken and stir.
Once the chicken is finished cooking it needs to be shredded. Add a bit more green sauce to the chicken. Cut the tortillas into triangles. Add sauce to a 9x13 baking pan covering the bottom, this prevents the tortillas from sticking to the bottom of the pan.
Time to construct..
Add the triangle tortillas to the bottom of the pan, covering the entire thing
Add sauce
Add a layer of beans to the edge of the pan
Spread the chicken to cover the previous layers
Add more sauce and cover with cheese
Finally, add olives (optional)
Repeat steps 1-6
Cover with foil. Bake for 20 minutes at 375*. Then take the foil off and cook for 10 more minutes. Let the casserole sit out of the oven for five minutes.
