This recipe was a nice warm treat for breakfast one morning. The yogurt is a great contrast for the roasted pear. Topped with honey and granola, makes this one savory dish! This is a very easy recipe to make for breakfast, side dish, snack, even dessert.
Ingredients needed..
1/4 cup rolled oats
1/4 cup chopped almonds
2 tbsp flour
1/2 tsp cinnamon
3 tbsp honey
2 tbsp extra-virgin olive oil
1 tsp extra-virgin olive oil
2 firm/ripe pears
2/3 cup yogurt
Dash of salt
Getting started..
In a medium bowl combine: oats, almonds, flour, cinnamon, and dash of salt
Drizzle 2 tbsp of honey and 2 tbsp olive oil
Stir until mixture is moist and clumpy
Halve both of the pears and take core out
Assembly..
Place each pear, cut side up, in a 8 x 8 x 2 in. pan
Coat pears with 1 tsp olive oil
Top each pear with a bit of the crumble mixture
Get baked..
Have the baking rack in the middle of the oven and preheat to 375 degrees
Bake until the pears are tender and topping is crisp (30-35 minutes)
Presentation..
Stir the remaining 1 tbs of honey into the yogurt
Scoop the yogurt into your serving bowls creating a small blanket for your pear to lay
Place the warm pears into the yogurt
This recipe is one of my favorite holiday desserts. It tastes so delicious you would not believe that it is healthy! I had never tried a baked pear before, after this recipe I want to eat them all the time. I hope you will enjoy this recipe as much as I do.
