It is getting cold outside and my favorite thing to eat in the winter time is soup! It warms your insides and your heart. This soup was inexpensive, was enough for my family, and had plenty for leftovers.
Ingredients needed:
3 tbs butter
1 tbs olive oil
2 garlic cloves
1 cup onion
1/2 cup celery
1/4 cup flour
1 cup whole milk
14 oz chicken broth
1 tbs fresh thyme
1 cup shredded carrots
1 cup spinach
1 cup diced (cooked) chicken
16 oz potato gnocchi
Salt & pepper to taste
Let's get started..
Start off by cooking your chicken and chopping your onions, celery, and garlic. If using fresh carrots shred them now too.
On medium heat sauté celery, onions, and garlic
Add flour to make a roux
Add whole milk and chicken broth to your roux
Continue to add carrots, thyme, spinach, and cooked chicken
Boil for 7 min to allow the soup to thicken
Add your gnocchi
Simmer for three minutes to allow the gnocchi to cook
Salt and pepper to taste
Serve and enjoy!
I hope you enjoy this very simple recipe. This recipe is similar to the soup that you can buy at Olive Garden, but much cheaper.
